Low Fat Chicken Fingers6 boneless/skinless chicken breast halves (each cut into 4 strips)
4 egg whites well beaten with a fork
1 1/2 tsp garlic powder
1 1/2 tsp seasoning salt
1 1/2 tsp onion powder
2 Tblsp dried parsley flakes
2 cups corn flake crumbslow fat cooking spray (this is used to grease the pan, and to spray on the chicken to help make the strips crispy)
combine the chicken strips and egg whites in a bowl, making sure the chicken is well coated with the egg whites
in a bag mix all the rest of the dry ingredients together
pour the crumb mixture on a plate, dip the chicken into the crumbs until completely coated
place chicken strips on a lightly sprayed baking sheet, spray the chicken lightly with the cooking oil spray
bake in a 400 degree oven for 10 minutes, turn the pieces over and bake for another 10 minutes, or until there is no pink left in the chickenserve with Low Fat Fries (listed above)
or a tossed salad with low fat salad dressing
