Low Fat Peach Nut Muffins

1 1/4 cups all purpose white flour
1 cup whole wheat flour
2/3 cup packed brown sugar
1 Tblsp baking powder
1/4 tsp salt

1 14 oz can peaches with juice (pureed in a blender)
1 large egg white
1/2 tsp vanilla
1/2 cup dried peaches  (finely chopped, then measured)
1 whole large egg
2 Tblsp canola or low fat vegetable oil

2 Tblsp chopped pecans
2 Tblsp flaked coconut

combine the first 5 ingredients

combine next 6 ingredients and mix well, pour into the dry ingredients and stir until moistened
spoon batter into 12 lightly sprayed muffin cups
combine pecans and coconut, and sprinkle over the top of the muffins


Bake in 350 degree oven for 20 minutes (until a wooden toothpick inserted into the muffins, comes out clean. Remove from the oven when done, and leave in the pan for 5 minutes. Remove the muffins to a cooling rack until cooled
