Low Fat Beef Fajitas

1/2 cup lime juice
2 Tblsp olive oil
1 tsp chili powder
1/2 tsp paprika
mix these ingredients together and add the beef strips

1 very tender beef steak (cut into 1/4 inch strips) (enough steak to make 8 tortillas) (this amount varies, depending on the amount of meat desired in each tortilla)

2 medium red bell peppers (cut into strips)
1 large red onion (cut into wedges)
2 medium tomatoes (chopped)
1/2 cup green onion (chopped)
1/4 cup fresh parsley (chopped)
1/8 cup warm water (this is to simmer all the ingredients together)

8 large floured tortillas (warmed)

marinade beef in (oil, lime mixture) for 30 minutes
preheat a no stick frying pan, drain beef, and fry on med-high heat, until cooked (about 10 minutes)

remove beef strips to a plate
place peppers, water and red onion in the pan and stir fry on medium heat until the peppers are tender, add beef strips, parsley, and tomatoes to the peppers and onion mixture, stirring constantly, heat approx 6 minutes, until the water is absorbed, and the mixture is hot

serve inside warmed tortillas
