Sweet N Sour Stir Fry

2 cups baby carrots    (bite size pieces)
1 large green pepper   (bite size pieces)
1 large red pepper      (bite size pieces)
2 cups broccoli           (bite size pieces)
2 cups cauliflower       (bite size pieces)
1 medium red onion   (bite size pieces)
1 cup celery                (bite size pieces)
1/4 cup water              (used to steam the veggies as they cook)

sauce:

1 cup orange juice (or) pineapple juice
2 Tblsp vinegar
4 Tblsp brown sugar
4 Tblsp ketchup
1 tsp finely minced ginger
1/4 tsp salt
4 tsp cornstarch
1/2 cup water

place all of the sauce ingredients into a bowl and mix well (set aside)

in a lightly sprayed no stick fry pan add carrots, broccoli, and cauliflower, plus 2 tsps water, stir constantly over med-high heat for about 5 minutes, then add the rest of the vegetables and water, stir well, then cover and steam for 5 more minutes, until the vegetables are tender-crisp. add the sauce to the vegetables stirring constantly. when the sauce has thickened remove the pan from the heat

serve over steamed rice or noodles
